三餸一湯|野山椒炒牛肉 Stir fried Beef with Preserved Perennial Chilli
醃漬野山椒3條
肉眼牛扒1件
辣椒1隻
蒜頭2片
豆瓣醬1湯匙
黃糖1.5湯匙
生抽1茶匙
蠔油1湯匙
生粉1湯匙
油1茶匙
麻油1茶匙
1. 薑、辣椒切粒;醃漬野山椒對切;肉眼牛扒切條。
2. 將1/2湯匙糖、生抽、蠔油、油、麻油、生粉加入肉眼牛扒,攪拌均勻,醃15分鐘。
3. 燒熱油,加入肉眼牛扒,煎至金黃色,取出。
4. 原鑊加入薑、蒜頭、辣椒、野山椒,加入肉眼牛扒、豆瓣醬、糖、炒至均勻。
Stir fried Beef with Preserved Perennial Chilli
Ingredients:
Preserved perennial chilli 3 pcs
Rib eye 1 pc
Hot pepper 1 pc
Garlic 2 slices
Ginger 1 slice
Chili bean sauce 1 tablespoon
Light brown sugar 1.5 tablespoons
Soy sauce 1 teaspoon
Oyster sauce 1 tablespoon
Cornstarch 1 tablespoon
Oil 1 teaspoon
Sesame oil 1 teaspoon
1. Dice ginger and hot pepper. Cut preserved perennial chilli into two pieces. Cut rib eye into strips.
2. Put 1/2 tablespoon sugar, soy sauce, oyster sauce, oil, sesame oil and cornstarch into rib eye, mix well and marinate for 15 mins.
3. Heat the oil, pan fry rib eye until golden brown and take out.
4. Put in ginger, garlic, hot pepper, preserved perennial chilli into the same pan. Put back the rib eye, add into chili bean sauce and sugar stir fry until mix well.
